So it appears my fridge has become saturated with green veggies!
Normally that is great news but I’m leaving for California in two days and have to eat all those veggies before departure.
Best way to do so besides green smoothies (which I’ve also been consuming), make massive salads with a delicious dressing! I made this lemon poppy seed dressing to be simple, easy to make and super delicious.

Lemon Mango Poppy Seed Dressing
Makes: 10 servings Pre-Time: 3 mins Blend Time: 30 seconds
- 1 1/2 tbsp honey
- 1 1/2 tbsp raw almond butter
- Juice from 1 lemon
- pinch of salt
- 1 mango, peeled
- 1/4 cup cold water
- Combine all ingredients in a vitamix blender (or food processor). Blend until smooth.
