Happy Easter Everyone!
I hope you all had a fantastic long weekend filling your tummies with lots of healthy, wholesome vegan food. At least that’s what I did (today anyways).
This is my last holiday in Ottawa and I was lucky enough to celebrate the special occasion with good friends all the while eating nutritious delicious foods. My roommate and I hosted the Easter dinner at our place for a total of 6 people. We made the following:
- Mashed potatoes
- Corn on the cob
- Steamed Brussels sprouts (served with malt vinegar)
- Vegan Nut Loaf (http://ohsheglows.com/2012/10/05/glazed-lentil-walnut-apple-loaf-revisited/)
- Apple sauce
For dessert we chose to keep it light and serve fresh fruit and a tasty dark chocolate chia seed pudding (See next post for recipe).
The night was spent reminiscing over the past four years of university. All the embarrassing moments surfaced and a lot of laughs were had. At one point Chris was on the floor laughing.
Its moments like these when you truly appreciate all the wonderful people one has in their lives. Check out the evenings photos.
