My lunch recipe today came from a recent video I watched by Megan Elizabeth. (http://meganelizabeth.com/ns/media/videos/). The recipe I am posting below is the same as in her video except I used a peach instead of strawberries. Try it out. If you like it let her know 🙂
Raw Vegan Pizza Bitz
Makes: 1 serving Prep: 5 minutes
- 2 tbsp cashews
- 2 tbsp hemp seeds
- 2 tbsp nutritional yeast
- 1 tbsp fresh thyme
- 1 tbsp fresh rosemary
- 4 basil leaves
- 1 peach
- 1 cup sun-dried tomatoes
- Juice from 1 lemon
- 1 tsp Himalayan sea salt (optional)
- 2-3 Zucchinis
- Spinach, chopped
- In a blender, combine all cheese ingredients until fine. Set aside.
- In a high speed blender, blend all pizza sauce ingredients until smooth. Set aside.
- Cut zucchini into thin strips. Top zucchini slices with pizza sauce, then sprinkle cheese, then sprinkle spinach. Repeat for all zucchini strips.
